Pink tortillas anyone? Turns out, these beauties were an accidental creation by the chef at @lapitahayavegana who happened to drop some beetroot juice on his tortilla dough. Some trial, error and loads of inspiration from Chefâs Table later, the result is now served in his small, delicious restaurant. We were lucky to get a peek into the kitchen, and had a chance to taste their specials on the menu. The restaurant made us realize that it doesnât take a lot to innovate with plant based meals. The ingredients are right there, if only weâd look. We were totally blown away by the use of coconut flesh, and edible cactus vegetable in their cuisine.
